Seven ingredients? YES! Seven ingredients!
First, I should say: it’s been forever! I’ve been working a whole lot, I’ve moved, have discovered The Tudors. Needless to say, my dance card’s been full. But now that I’m settled into the new place, I’ve been cooking and baking like none other! So, without further ado, the cobbler:
STRAWBERRY BALSAMIC COBBLER
2 lbs. strawberries, hulled and quartered
3 T brown sugar
2 t balsamic vinegar
10 fresh basil leaves, cut chiffonade
1 cup flour
1 cup sugar
1/2 cup butter, melted
1. Combine strawberries, brown sugar, balsamic vinegar, and basil leaves. Macerate in a 9×9 baking pan for 20 minutes.
2. In another bowl, mix sugar, flour, and butter until it holds together as a crumbly dough. Form the dough into patties, laying the patties on top of the strawberries until the strawberries are completely covered.
3. Bake at 350 degrees for 40 minutes.
Mine’s in the oven now, but I’ll be sure to report back as soon as it’s ready to eat! Yay baking!
